Her name is given in the sequel as Jeanine Stifler.

The original MPAA-rating for the film was NC-17. This financially devastating rating had to be avoided for the theatrical release, therefore, some changes were necessary. These resulted in the use of alternate shots that are more harmless. The unrated cut of the movie later released on DVD and Blu-ray has all this material back in. A detailed comparison between both versions can be found here.

It's called "One Week" by Barenaked Ladies. It also plays at the start during Stifler's party.
